No one eats buttercream because they're on a diet...

Happy Halloween!!

I was feeling festive this weekend, and since you should never show up to a party empty handed, I hopped all over the chance to whip up a batch of candy corn themed Halloween cupcakes!!! I layered white, orange, and yellow cake batters in my muffin tins to echo the layers in candy corn and topped them with some super fluffy buttercream!

Buttercream has always been somewhat of a personal challenge... I am very particular about my cupcake frosting: it must be fluffy, and it can't be too grainy, too sweet, or so fatty that it coats your tongue. There are shockingly few buttercreams that can handle such requirements, and I certainly had never mastered one myself... until Saturday! Recipe is below.

 

Buttercream Frosting

3 sticks of butter, softened but not melted
2 lbs of 10x sugar, sifted
1/2 t. salt
2 t. vanilla
4T heavy cream, whipped

In a stand mixer or with an electric mixer, whip ingredients together until smooth and fluffy. If the texture is dry, add in unwhipped heavy cream a teaspoon at a time. Pipe as desired!
